2 pcs medium size tomato (diced)
1 pc red onion (diced)
1 pc red bell pepper (sliced)
1 pc green bell pepper (Sliced)
1 tbsp leeks (sliced)
1 thumb ginger (minced)
1 ½ tbsp salted Black Beans
2 squares tahur (fermented tofu)
¾ cup water
2 tbsp soy sauce
¼ cup vinegar
1 bunch kangkong
1 tsp sugar (optional)
2 tbsp cooking oil
Salt
Pepper
Procedure:
1. Season bangus with salt and pepper then fry until lightly brown set aside. In the same heavy bottom pan, sauté onions, garlic, ginger and tomatoes until fragrant. Then add salted black beans, tahur and vinegar then cook for a minute. Add water and soy sauce and bring to a boil. Now add bangus then cook for 2-3 minutes.
2. Add kangkong, bell peppers and leeks then continue to simmer for about a minute. Season with sugar, salt and pepper to taste.
