MGA Kapuso, gawing every day happy ang inyong buong pamilya sa pamamagitan ng pagluluto ng mga masasarap na Pinoy dishes. Ngayong araw, ituturo ko sa inyo kung paano lutuin ang Baked Beef Afritada. Sa katakam-takam na lasa nito, tiyak na lalo nitong mapapasaya ang inyong pamilya. Yum yum yum!
Ingredients:
1 kg beef chuck, cut into 2×1 inch cube
3 pcs carrots, peeled and chopped
3 pcs potatoes, peeled and chopped
1 head garlic, minced
2 pcs red onion, sliced
1 can button mushrooms, quartered
¼ tsp dried thyme
Salt as needed
Black pepper as needed
Cooking oil for sauteing
3 tbsps white vinegar
4 tbsps soy sauce
1 tbsp fish sauce
2 pcs bayleaf
½ tbsp black peppercorn
2 tbsps all-purpose flour
150 ml red wine
½ tbsp white sugar
1 l water
1 l beef stock
Olive oil to drizzle
2 tbsps sliced pickles
1 ½ cup cheese, grated
6 pcs sliced white bread
1 tbsp flat parsley leaves, chiffonade
Procedure:
1. In a stock pot or pressure cooker, put cooking oil and turn to medium heat. Add in meat and season with salt and black pepper. Brown meat, add onions, garlic and vinegar.
2. Add the tomato paste and flour. Pour beef stock, water, bayleaf, peppercorn, thyme and fish sauce.
3. Add the caramelized wine to the beef.
4. Adjust taste with sugar. Add boiled carrots, potatoes, button mushrooms and pickles. Let it simmer.
5. Put afritada on an oven safe pan, top with sliced bread, pickles and cheese.
