MGA Kapuso, gawing every day happy ang inyong buong pamilya sa pamamagitan ng pagluluto ng mga kakaibang dishes na swak sa kanilang panlasa. Ngayong araw, pagsasamahin natin sa isang recipe ang dalawang traditional Filipino dishes na siguradong mamahalin nila – ang Kalderetang Bulalo. Sa katakam-takam na lasa nito, tiyak na lalo nitong mapapasaya ang pagsasama ng inyong pamilya. Yum yum yum!
Ingredients:
3 pcs beef shank (2 ½ inches thick)
6 cloves garlic (crushed)
1 pc white onion (quartered)
2 pcs siling labuyo
3 cups canned diced tomatoes
2 tbsp vinegar
1 pc large carrots (large dice)
1 pc large red bell pepper (large dice)
1 pc large green bell pepper (large dice)
1 cup pitted green olives
1 tbsp liver spread
½ cup grated cheese
2 pcs bay leaf
500 ml beef stock
2 tbsp olive oil
Salt
Pepper
Procedure:
1. Tie beef shank with kitchen twine then season with salt and pepper.
2. On a heavy bottom pot heat olive oil then sear beef shank on all sides then set aside. On the same pot sauté onions, garlic until fragrant then add siling labuyo. De-glaze with vinegar then add canned tomatoes. Simmer for 5 minutes then add beef stock, bay leaf and season with pepper and bring to a boil. Put beef shanks in the pot then let it simmer until fork tender then add liver spread. Add carrots then simmer until carrots become tender then add bell peppers and simmer for another minute.
3. Add olives and grated cheese and simmer for another minute then season with salt and pepper.
