Ingredients:
500 grams prawns (peeled and deveined)
1 cup tapioca flour
2 eggs (egg whites only)
Salt
Pepper
Oil for deep fry
8 itlog na maalat
8 tbsp butter
2 Siling haba (sliced)
¼ cup chicken stock
1tbsp sugar
1 lemon
Spring onions (sliced)
Procedure:
1. Season prawns with salt and pepper then dip in egg whites then drench in tapioca flour. Deep fry until golden brown. Set aside on top of plate lined with paper towel.
2. In a sauce pan, heat butter then add itlog na maalat. Mix until smooth then add siling haba and sugar. Continue to cook for a minute then add chicken stock.
3. Toss in fried prawns then squeeze in lemon juice. Garnish with spring onions.
