ISANG yum yum yum na araw ng pagluluto, mga Kapuso! Ngayong araw ay ituturo ko sa inyo ang isang masarap at easy-to-prepare vegetable dish na tiyak magugustuhan ng inyong pamilya, ang Lumpiang hubad in Lettuce Cups. Subukang lutuin ito para sa tanghalian o merienda.
Ingredients:
1 red onion (sliced)
3 cloves garlic (minced)
2 cups Baguio beans (sliced & blanched)
2 cups carrots (sliced & blanched)
1 cup celery (sliced & blanched)
2 cups singkamas (sliced & blanched)
1 cup kamote (sliced & blanched)
2 cups red cabbage (sliced)
1½ cups bean sprouts
250 grams shrimps (peeled)
1½ cups chicharon (may Laman)
12 pcs. wanton wrapper (sliced into strips & fried)
2 tbsps. vegetable oil
¼ cup chicken stock
Salt
Pepper
Chives for garnish
Romaine lettuce (separated)
½ cup peanut butter
3 cloves garlic (minced)
2 tbsps sweet soy sauce
¼ cup chicken stock
1 tbsp peanuts
Procedure:
1. Heat pan and oil then sauté onion and garlic until fragrant then add prawns. Cook until prawns change in color.
2. Add all the vegetables then sauté for a minute. Pour chicken stock then season with salt and pepper.
3. To make the peanut sauce, combine peanut butter, garlic, sweet soy sauce, chicken stock and peanuts on a food processor or blender then puree into smooth sauce.
4. To assemble, spoon vegetable mixture on top of romaine lettuce then drizzle with peanut sauce. Then top with chicharon and wanton wrapper and garnish with chives.
