Peking-style itik

YUM yum yum, mga Kapuso! Kung ang hanap ng inyong panlasa ay isang kakaibang chicken recipe, narito ang masarap na Peking-style Itik. Siguradong makukumpleto na ang tanghalian o hapunan ng inyong pamilya at wala na kayong hahanapin pa.

Ingredients:
1 whole itik, dressed and cleaned
2 tbsps oyster sauce
2 tbsps dark soy sauce
3 tbsps sesame oil
1 tsp salt
2 tsps white pepper
½ cup soy sauce
1 cup white sugar
3 pcs star anise
1 tsp 5 spice powder
2 tbsps hoisin sauce
2 liters chicken stock
Oil for deep-frying

Ingredients for the sauce:
2 tbsps cornstarch, diluted in 2 tbsps water
2 cup stock from itik

Ingredients for garnish:
½ pc carrots, thinly sliced
1 stalk onion leeks, white part only
Procedures:

1. In a stockpot, boil chicken stock, oyster sauce, dark soy sauce, salt, white pepper, white sugar, star anise, five spice powder, and hoisin sauce.
2. Add itik and simmer for one hour, remove itik from stockpot and hang overnight.
3. Preheat deep-frying pan. Deep-fry itik until golden brown. Drain and set aside.
4. In a separate pan, get two cups of itik stock. Let it simmer and add the cornstarch-water mixture.
5. Garnish with leeks and carrots.
